Brownies

1 box of brownie mix
1 can of black beans

Rinse and drain the beans, put them in a bowl add 1 cup of water and blend till smooth. Add mix, stir. Bake in cup cake tins at 350 till done. These are rather dense so the tins work the best.

Low fat and high protein not to mention CHOCOLATE!!

Life

I have been car-less off and on for about 2 months. (more off than on) It has not been that bad. I have noticed that I am spending less money. I have also noticed that I am getting more done around the house. Today it is clean the bathtub. A HUGE job since we have VERY hard water.



I made 3 loaves of bread on Tuesday. (Someone has offered to pay me to bake for them. How much do you charge for a loaf of homemade bread is the question.) One of them was an Irish Soda Bread that I colored green. This went over better than the mac-n-cheese that I tried to turn green for lunch. lol It looked really gross. The family that we had over was not too impressed with it either.



Benjamin got a bloody nose at school on Monday. Seems J and S didn't want to play with him so they just shoved him out of the way. He had no idea that this was a bad thing. He said they were just trying to play with him. (ya right) The OAISD lady doesn't come often enough to help coach him in on social things outside of the classroom. He has been playing group games trying to help "train" him for indoor situations. It has gotten a little better and we are now able to play with him instead of watching him play. YEA for progress. My heart is so sad; his awareness that he often plays alone is increasing and there isn't much I can do to help him. He likes wrestling practice. But once again he needs to be coached on the social graces of life. sigh God has given each of us, including Benjamin, no more than we can handle. I need to remember he will and can make it through this.

Bread Day

Yesterday I made English Muffins http://fooddownunder.com/ using spelt. They turned out wonderful. Very light. I used whole milk cottage cheese, ground up with my hand blender, instead of yogurt. I only let it rise once.



Today is Muenster Cheese Bread http://oneperfectbite.blogspot.com/search/label/cheese I can hardly wait to taste it. As usually I changed the recipe. I used about 1/4 C. Cottage cheese. Then I added about 3 T. buttermilk powder and water to make 1 cup. I added 1/8 tsp vitamin c powder and 1 1/4 tsp lecithin granules. Oh least I forget more cheese. I am of the school of "if a little is good more is better". Same as above only one rise.



I have started baking bread in a cold oven. I learned this at the SDA cooking class and have had good results.

It was out of this world. Thanks Mary for sharing this recipe. Very tasty.

My oldest baby survived his first wrestling practice. He said he really had fun. I hope this helps him with some of the social issues he has. Time will tell. He is not very coordinated so it was rather funny to watch.

Cooking "spray"

I am on a mission to save money. I want to be a good steward of what God has given us. We have found that without cutting things out of our budget; tithing becomes a burden and a chore. Not at all what God intended from the happy giver.

Keeping on that theme I have made my first batch of cooking "spray".

It is:

3/4 cup oil (canola)
2 Tab. Liquid Lecithin

I put it in a container with a brush and will use it as I would baking spray.

I got this recipe from a bread class (more on that latter) that I took at the SDA church in Pullman. http://www.clnf.org/ They have an amazing amount of healthy vegetarian things on their website.

I just love the rush I get as I strive to do thing the way my Grandparents may have done them. We waste so much money now days it almost makes me ill. I have and will continue to make my life and the life of my family as "crunchy" as possible.
